Personally I use Fantasia Gel, the brown kind. It’s great and holds my hair without making it hard or drying it out. You can find it at most beauty supply stores. The answer to your question depends on how you want to wear your hair. If you’re trying to push it back into a ponytail or puff well then style it wet. Put the gel all over and brush back. Then tie a headscarf around your hair pretty tightly and let your hair set in that condition. It usually on takes about 10 minutes for my hair but if you want to wait for it to completely dry then wait for about 30 minutes. It keeps my edges from being frizzy all day and if I remember to tie my hair up at night it even keeps away the frizzies for a couple of days. Also since you have natural hair try this website http://www.nappturality.com. There are a ton of us with natural hair there and you can get many tips on your hair.
